A study found that broccoli "zapped" in the microwave with a little water lost up to 97 percent of its beneficial antioxidants; but, steamed broccoli lost 11 percent or less of its antioxidants. Microwaves are used in the field of gene altering to actually weaken cell membranes and break them apart. These damaged cells then become easy targets for pathogens to move in.
